This is a Middle Eastern favorite and of course it’s vegan! I;m guessing it will soon be an American favorite too!

MASHED POTATOES SAMBOOSIK

Healthy, vegan, baked "mashed potatoes" in a puff pastry.

Ingredients
  

For White Potatoes

  • 1 cup Baked and slightly mashed potatoes It's better when you bake than boil
  • 1 cup Frozen mixed vegetables
  • cup Garbanzo beans (chickpeas) drained
  • 3 Green onions, chopped
  • ½ cup Fresh Parsley, chopped
  • 1 tbsp Victoria's vital spice mix or Cumin
  • 1 tbsp Nutritional Yeast
  • 1 package Puffed Pastry
  • salt and pepper to taste
  • Sesame Seeds to garnish

For Sweet Potatoes

  • 2 cups Baked and slightly mashed sweet potatoes
  • 1 tbsp Vegan Butter
  • 2 tsp Cinnamon
  • ½ tsp Nutmeg optional
  • ½ cup Raisins
  • 2 tbsp Agave or Maple syrup
  • 1 package Puffed Pastry
  • Few Pecans for Garnish

Instructions
 

For White Potatoes

  • Mix together the ingredients from potatoes to yeast and set aside
  • On a floured surface spread the pastry cut to 12 squares.
  • Put the squares on top of the cup cake pans fill and shape or just fill and shape it by pinching the edges together leaving some opening on the top
  • Bake 15-20 minutes on 375° F
  • Broil as you watch until they are brown on top – 2 minutes or less depending on your oven.

For Sweet Potatoes

  • Mix together the ingredients from potatoes to maple syrup and set aside
  • On a floured surface spread the pastry cut to 12 squares.
  • Put the squares on top of the cup cake pans fill and shape or just fill and shape it by pinching the edges together leaving some opening on the top
  • Bake 15-20 minutes on 375° F
  • Broil as you watch until they are brown on top – 2 minutes or less depending on your oven.
