VEGAN KUBBEH
A delicious middle eastern treat for vegans!
Ingredients
KUBBEH INGREDIENTS
- 4 cups bulgar #1 soaked in 2 cups water
- Handful fresh mint fresh oregano and fresh marjoram
- 1 large onion
- 1 jalapeño pepper or half
- 1/2 red pepper
- 1 tablespoon smoked paprika or Tika hot
- 1 tablespoon sweet paprika
- 1 tablespoon Pepper past
- salt to taste
KUBBEH METHOD
- I food processor grind until smooth consistency
- Add zest of 1 lemon
- Mix with the wheat and keep pressing and mixing then few patches in the food pro and process until it all hold together please watch the videos for details
- Divide to 4 balls spread on in the bottom of your pan spread generous amount of the filling then cover with the second ball (again please watch the video for clear details and directions).
- Mushrooms
Instructions
- KUBBEH FILLING INGREDIENTS
- 2 lbs Cremini, button or oyster mushrooms shopped really fine you can mix
- 6 onion chopped really fine
- Olive oil
- 1 Tablespoon 7 spiced
- Pine nuts 1/2cup
- Salt and pepper to taste
- KUBBEH FILLING METHOD
- In hot oil roast, the pine nuts just very light brown keep turning or it will burn,
- Remove and in the remaining oil sauté the mushrooms turning and flipping for about 4-5 minutes
- Remove and sauté the onions like the mushrooms.
- Add the spices and the mushrooms and cook together for few minutes until your onions and mushrooms are almost cooked.
- Salt and hot spices to taste
