Vegan spaghetti squash in a cup

Ingredients
  

  • 1 package Beyond Beef
  • 1 package puff pastry
  • 3 cups spaghetti squash baked, peeled, and seeds removed
  • 1/2 cup Victoria’s marinara sauce
  • 2 tablespoons vegan earth balance butter
  • Vegan Parmesan I used Follow Your Heart to sprinkle
  • 1 head garlic chopped
  • Basil and oregano
  • 1 tablespoon Italian seasoning

Instructions
 

  • Method:
  • In sauce pan sauté and cook garlic and Beyond Beef with Italian seasoning and oregano
  • Add spaghetti and marinara gently mix and cook for a minute
  • Add basil.
  • Cut the puff pastry into 4 sections each sheet (depending on which one you using).
  • Add the spaghetti mix and fold the corners together (check pictures)
  • Rub the pastry with starch and water to hold it together and close it.
  • Bake in 375° F for 20 minutes (depending on your oven) then just broil to light brown (watch the oven ).
  • Serve hot or cold, you can also reheat.
