This is a Middle Eastern favorite and of course it’s vegan! I;m guessing it will soon be an American favorite too!
MASHED POTATOES SAMBOOSIK
Healthy, vegan, baked "mashed potatoes" in a puff pastry.
Ingredients
For White Potatoes
- 1 cup Baked and slightly mashed potatoes It's better when you bake than boil
- 1 cup Frozen mixed vegetables
- ⅓ cup Garbanzo beans (chickpeas) drained
- 3 Green onions, chopped
- ½ cup Fresh Parsley, chopped
- 1 tbsp Victoria's vital spice mix or Cumin
- 1 tbsp Nutritional Yeast
- 1 package Puffed Pastry
- salt and pepper to taste
- Sesame Seeds to garnish
For Sweet Potatoes
- 2 cups Baked and slightly mashed sweet potatoes
- 1 tbsp Vegan Butter
- 2 tsp Cinnamon
- ½ tsp Nutmeg optional
- ½ cup Raisins
- 2 tbsp Agave or Maple syrup
- 1 package Puffed Pastry
- Few Pecans for Garnish
Instructions
For White Potatoes
- Mix together the ingredients from potatoes to yeast and set aside
- On a floured surface spread the pastry cut to 12 squares.
- Put the squares on top of the cup cake pans fill and shape or just fill and shape it by pinching the edges together leaving some opening on the top
- Bake 15-20 minutes on 375° F
- Broil as you watch until they are brown on top – 2 minutes or less depending on your oven.
For Sweet Potatoes
- Mix together the ingredients from potatoes to maple syrup and set aside
- On a floured surface spread the pastry cut to 12 squares.
- Put the squares on top of the cup cake pans fill and shape or just fill and shape it by pinching the edges together leaving some opening on the top
- Bake 15-20 minutes on 375° F
- Broil as you watch until they are brown on top – 2 minutes or less depending on your oven.
