Vegan Baklava

Ingredients
  

Baklava Ingredients

  • 16 oz phyllo dough thawed
  • 3/4 cup melted vegan butter
  • 5 cups nuts coarsely chopped fine
  • I used walnuts pecans and cashews
  • 1/2 cup sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg

Syrup Ingredients

  • In saucepan combine boil
  • 3/4 cup raw organic sugar
  • 1/2 cup maple syrup
  • 1 cup water
  • 2 tablespoons lemon juice
  • 1/4 rose water or mint water optional

Baklava Method

  • Prep:
  • Thaw the phyllo overnight in the fridge, then 1 hour on the counter before using.
  • trim to fit your tray and place it on damp towel to prevent it from braking.
  • Brush the bottom and sides of the tray with butter
  • Place few sheets 6-8 in the pan brushing each one with butter
  • Add layer of nuts then few sheets phyllo butter each one
  • I did w layers thick nuts and 2 thinner in between the phyllo sheets.
  • Brush the top with butter.
  • Cut into 1 1/2″ wide strips, then diagonally for diamond shape.
  • Back at 310F for 55 -65 minutes until top is golden brown.
  • Remove from oven immediately drizzle the syrup evenly between the cuts to ensure that it stays crispy not soggy.
  • Repeat after few minutes if you like.

Syrup Method

  • Boil and keep stirring until sugar is dissolved
  • Reduce heat to medium low let it boil 5 more minutes
  • Remove from heat let it cool completely before you pour it over the baklava to prevent it from getting soggy.
