MASHED POTATOES SAMBOOSIK
Healthy, vegan, baked "mashed potatoes" in a puff pastry.

Ingredients
For White Potatoes

cup
Baked and slightly mashed potatoes
It's better when you bake than boil

cup
Frozen mixed vegetables
⅓
cup
Garbanzo beans (chickpeas)
drained
3
Green onions, chopped
½
cup
Fresh Parsley, chopped

tbsp
Victoria's vital spice mix or Cumin
1
tbsp
Nutritional Yeast
1
package
Puffed Pastry
salt and pepper to taste
Sesame Seeds to garnish
For Sweet Potatoes
2
cups
Baked and slightly mashed sweet potatoes
1
tbsp
Vegan Butter
2
tsp
Cinnamon
½
tsp
Nutmeg
optional
½
cup
Raisins
2
tbsp
Agave or Maple syrup

Puffed Pastry
Few
Pecans for Garnish
Instructions
For White Potatoes
Mix together the ingredients from potatoes to yeast and set aside
On a floured surface spread the pastry cut to 12 squares.
Put the squares on top of the cup cake pans fill and shape or just fill and shape it by pinching the edges together leaving some opening on the top
Bake 15-20 minutes on 375° F
Broil as you watch until they are brown on top - 2 minutes or less depending on your oven.
For Sweet Potatoes
Mix together the ingredients from potatoes to maple syrup and set aside
On a floured surface spread the pastry cut to 12 squares.
Put the squares on top of the cup cake pans fill and shape or just fill and shape it by pinching the edges together leaving some opening on the top
Bake 15-20 minutes on 375° F
Broil as you watch until they are brown on top - 2 minutes or less depending on your oven.
